Ageing winery

The tangible experience of this respect for winemaking can be seen by the wine tourist while touring the ageing cellar, the first point of the visit to Protos on Day V.

This winery is made up of more than 2 kilometres of underground galleries excavated under Peñafiel Castle. Its natural and constant characteristics, both in terms of temperature and humidity, (key premises for the optimum barrel ageing that wine needs), as well as its ventilation systems through luceras, la convierten en un ejemplo de compromiso con el medio ambiente evitando la generación artificial de humedad y refrigeración y por tanto sin generación de residuos.

Richard Rogers Winery

After passing through these wineries, we will arrive at the winery designed by Richard Rogers, an architect known for his commitment to sustainability, a key consideration in the design of this boutique winery. The main objective was to create a modern winery with a low environmental impact that would be visually integrated as another element of the Peñafiel landscape.

Through the use of contemporary techniques in terms of structural forms and construction solutions.

The building consists of two main elements in section, the base anchored in the ground and the light and airy envelope that sits on top of it. Its base houses a fully underground cellar. The material selected for this structure was concrete, whose high inertia contributes to the effective circulation of untreated air to maintain a constant temperature.

The form of the building, the façade and the introduction of reliable construction systems were designed to reduce the building's energy requirements, with flexible space-dependent environmental conditioning systems.

They have a very high level of insulation, reducing the need for heating and air conditioning.

On the one hand, low night-time temperatures are very effective for continental climate zones such as Ribera del Duero. On the other hand, a low temperature water system has been installed in the winery, in order to control the temperature increase, especially after the transfer of wine volumes to the cellar after the fermentation period.

The building incorporates different systems for the treatment and reuse of water, as well as ultraviolet light treatment to disinfect it without having to chlorinate it.

In conclusion, it is important to point out that the Protos wineries in the Rueda y Cigales forman parte de la certificación Wineries for Climate Protection, the first and only certification specific to the wine sector in the field of environmental sustainability.

Protos’27 2022

Protos'27 is the result of more than ten years of research in the improvement of cultivation techniques, vineyard and barrel characterisation, as well as the use of indigenous yeasts.

Made from 100% tinta del País grapes from vineyards in very poor, limestone soils on steeper slopes, 50 years old, in the province of Burgos, located in Anguix, Roa, Quintanamanvirgo and La Horra, with yields of 2,500kg/ha.

It is aged for 16 months in new and one-year-old French oak barrels, where it first underwent malolactic fermentation and then the rest of the ageing process, rounded off with 12 months in the bottle before being released onto the market. Protos'27 2022 has an intense cherry red colour, with violet tones, resulting in a lively, bright and attractive wine. The nose is elegant, complex and expressive. It stands out for its intensity of fresh red and black fruit and its milky and balsamic notes. On the palate, it is very balanced and easy to drink, with a good acidity that gives it freshness in the mouth and a long aftertaste of fruit and fine wood.

Protos Verdejo Reserva 2020

Categorized like Gran Vino de Rueda, Protos Verdejo Reserva is a wine made from 100% Verdejo grapes from vineyards over 35 years old grown on dry land in the typical gravelly soils of the Rueda appellation.

The grapes are harvested by hand at night and the unwanted clusters are removed by hand. Fermentation in French oak barrels, half new, half one year old, and is aged on its own lees in the same barrels for approximately 7 months (decided by tasting). Subsequent ageing in the bottle for a minimum of 17 months.

Yellow colour with a more intense tone than usual due to its one and a half years of ageing. High intensity on the nose with notable complexity between the fruity notes and the soft toasted notes of the barrels, with vanilla and fine notes of pastries. Great volume and structure accompanied by freshness and elegance thanks to its acidity. Expressive and persistent, it is a wine that will evolve over time.
