Pago de Carraovejas 2022 is a true gem that captures the essence of the landscapes and vineyards that surround this iconic winery in Ribera del Duero. Made with a masterful balance of Tinto Fino, Cabernet Sauvignon and Merlot, this wine reflects a passion for quality and innovation. Pago de Carraovejas 2022 stands out for its aromatic intensity, with notes of ripe black fruits, subtle spicy hints and balsamic nuances that evoke its ageing in French and American oak barrels. On the palate, its firm structure, velvety tannins and balanced acidity offer an enveloping and persistent experience. Ossian 2022
Ossian 2022 is the representation of a small universe of plots of the Verdejo variety that guard centuries of wine-growing tradition in the area of the Voltoya terraces. Vines up to 200 years old that bear witness to the uniqueness of their varietal richness and an almost extinct reality. Ossian is a historical legacy of Ossian Vides y Viñedos, one of the projects of Alma Carraovejas. The 2022 vintage maintains the elegance and freshness of a unique pre-phylloxera Verdejo. A landscape that has preserved the historical reality of the Segovian verdejo for hundreds of years. Genetic diversity hidden in each vineyard. Surprising delicacy. Length on a rested finish with which the character of the authentic verdejo reappears.

Suckling pig pie and garlic soups
The pastela de cochinillo and de ajo are exquisite creations that combine two emblems of Castilian gastronomy.
Pastela de cochinillo is made from suckling pig and is wrapped in a flaky pastry dough finished in the oven, which gives a crunchy touch to its mellow and soft interior.
Sopas de ajo are an iconic dish on Ambivium's menu that comes from the humblest Castilian recipe book, which has been revised to offer its own textures and flavours.
